Brew - Taste - Repeat.

Introduction

We often start with a common baseline and adjust from there based on specific parameters each brewing methods offer.
A parameter guide is a brewing recipe to achieve the optimal level of extraction, and most desirable sensory experience. Each coffee has its own parameters which describe the steps and factors to making a delicious drip, espresso or immersion brew; ideal for intermediate-level coffee enthusiasts who want to refine their skills or graduate from standard brew guides.Our parameter guides are developed by our Roasters and/or Coffee Ambassadors and published approximately two weeks after each coffee is released. Much like a cooking recipe, parameter guides are a starting point to steer you in the right direction. You may find the need to make small adjustments to dial in each coffee to your preference.

We're gonig to talk a lot about "Brew Ration". This is how to calculate it:
Wet Dose (g) ÷ Dry Dose (g) = Brew Ratio

Brew ratio lets you follow a recipe for any brew size using a simple calculation:
Brew Water (L) x Brew Ratio (g/L) = Dry Dose (g)

For example, if you are using the Heritage drip brew ratio of 57.8 g/L and 320g of brew water (as recommended in our pourover recipe), we can calculate the adjusted dry dose as follows:
320g = 0.32 L0.32 L x 57.8 g/L = 18.5g

For example, The adjusted brew ratio is 18.5g of ground coffee to 320g of brew water.

Espresso

What you need:
Freshly Roasted Coffee
Espresso Machine
Digital Scale
Tamper
Shot Glass (2oz)
Step By Step
1. Insert plunger and extend it out fully until the gasket is just past the #4 marking.
2. Invert the Aeropress
and rest it on the plunger, with the chambers opening facing upward.
3. Insert ground coffee, start timer and add 30g of water. Gently stir for 30 seconds.
4. Dose the remaining amount of water.
5. Fasten the cap on with a wetted paper filter, or metal disc and allow brew to steep for an additional 3 minutes.
6. Flip the Aeropress right side up and on top of your cup (3:30m). Press down gently until a hissing sound is made. Desired brew time is 4 minutes including pre-infusion.
7. Fill an empty cup or jar with ice. Pour concentrate over ice. Add milk and sugar as desired.
Taste, Asses, Repeat (if needed).

Pour Over: Chemex

What you need:
